Gumbo & Soups

Chicken enchelada soup

1 small onion, chopped
1 clove minced garlic
2 tablespoons oil
4-ounce can chopped green chilies
1 can beef broth
1 can chicken broth
1 can cream of chicken soup
One 16-3/4-ounce can chunk chicken
1-1/2 cups water
1 tablespoon steak sauce
2 tablespoons Worcestershire sauce
1 teaspoon ground cumin
1 teaspoon chill powder
6 corn tortillas cut in half-inch strips
3 cups Cheddar cheese shredded

Saute onion and garlic in oil. Add next 10 ingredients and bring to a boil. Cover and reduce heat. Simmer 1 hour. Add tortilla strips and cheese. Simmer uncovered 10 minutes. Serve with corn chips and chopped green onion as garnish.

Serves 6.

 

Corn shrimp soup

1/3 cup butter
3 tbs flour
1 med onion (minced)
1 stalk celery (minced)
1 med bell pepper (chopped fine)
One 16 oz can whole kernel corn
One 16 oz can whole tomatoes
1 cup water
1 lb peeled shrimp
Allspice (to taste)
Mace (to taste)
Thyme (to taste)

Saute onion, celery, and bell pepper in small amount of roux made with butter and flour. Add corn (if you can substitute fresh corn for canned please do) and whole tomatoes (with juice). Add cup of water. Simmer 1/2 hour. Add shrimp and seasonings and cook for 15-20 minutes.

Serves four.

 

Potato soup 1

4 cups chicken broth
2 chicken-flavored bouillon cubes
6 medium potatoes, peeled and diced
1 onion, chopped fine
2 sticks celery, diced
1/2 cup green onion
3 pieces of garlic
4 slices bacon
3 tablespoons bacon drippings
2 tablespoons flour for roux
1-1/2 cups milk
1/2 cup parsley
2 tablespoons Cajun Herbed spice seasoning
1 teaspoon Cajun Blended seasoning

Boil potatoes cut small. Mix the 4 cups of the broth and chicken bouillon cubes together. Add onion, celery, green onion, garlic together in the broth. Fry bacon, use the drippings to make roux, not too brown. Combine the potatoes, broth, chicken bouillon, and seasoning, and simmer for five minutes. Add milk and roux. Add crisp bacon, crumbled. Add Cajun Herbed rice and Cajun Blended. Reduce heat. Simmer for 5 minutes. Add parsley and serve.
