Casseroles Beef & potato casserole
Place potatoes on bottom and up sides of an 8x12 inch baking casserole dish. Bake uncovered at 400F for 20 minutes. Place beef, broccoli, 1/2 can of tried onions on cooked potatoes. Combine soup, milk, 1/2 cup of cheese and seasonings. Heat for about 30 seconds. Pour over beef mixture. Bake uncovered at 400F for 30 minutes. Top with remaining cheese and onions. Bake uncovered 2 to 3 minutes.
Green bean casserole I
Drain beans and set aside. Cut bacon slices in half. Roll 2-5 green bean stalks with section of bacon and secure with toothpick. Do the same until all is used. Place bacon rolls on a cookie sheet and bake at 350F until desired brownness. When done remove and drain. In casserole dish, grease well, then place pre-cooked bacon rolls into dish. Top with mushroom soup and cheese soup alternately. Cover with bread crumbs and return to oven and bake for about 20 minutes. May substitute cheese soup with shredded cheese.
Taco casserole
In a skillet, brown ground beef and onion until beef is browned and onion is tender. Drain. Add taco seasoning. Follow package directions to add water and simmer. Meanwhile crush 3/4 of the tortilla chips sprinkled over the bottom of a 13 x 9 x 2 inch baking dish. Top with beef mixture. Spread with soup. Sprinkle with tomato and cheese. Bake uncovered at 350F for 20 minutes. Sprinkle with lettuce. Serves 4.
